Perfect Flan

Making this flan de queso was the most nerve wrecking experience I have ever had while making a dessert.

Ingredients

  • 1½ cup Sugar
  • 4 oz Cream Cheese softened
  • 4 Eggs
  • 1 can Condensed milk
  • 1 can Evaporated milk
  • 1 tsp Vanilla Extract
  • 6 cup Water

Instructions

  1. Pre-heat your oven to 350F.
  2. Fill a large pot with water and heat over high heat to bring to a boil. You are going to use this boiling water to make your hot water bath.
  3. Add the sugar to a medium sauce pot and heat over medium heat, until the sugar starts to melt and become slightly brown. This can quickly overcook so once it starts to brown and bubble, immediately remove it from the heat. After, pour the melted sugar into your baking pan and set aside to cool.
  4. To make the filling add the vanilla, eggs, condensed milk, evaporated milk, and softened cream cheese to a blender and puree it. Slowly pour this into the baking pan where the melted sugar is in.
  5. Place the baking pan into a baking dish and fill it up halfway with hot boiling water.
  6. Place the preheated oven at 350F and cook for 50-55 minutes. When it is done cooking, give it a slight giggle. The center of the flan should wiggle slightly while the outer part should be stiff.
  7. Remove from the oven, and remove the baking pan from the hot water bath and allow to cool to room temperature before placing in it in the fridge.
  8. Cool in the fridge for 4 hours (the longer the better).
  9. When you are ready to serve, run a sharp knife along the edge of the pan to loosen the side. Place a plate upside down over the top of the baking pan and carefully flip over. Slowly lift the pan up. Serve and Enjoy!
