Ingredients

  • 1 cup mixed dried fruits
  • 1 cup water
  • 1/2 cup brown sugar
  • 1/2 cup butter
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp salt
  • 1/4 cup milk
  • 1/2 tsp vanilla extract

Instructions

  1. In a saucepan, combine dried fruits and water. Bring to a boil and simmer for 5 minutes. Remove from heat and let it cool.
  2. Preheat oven to 350°F (175°C). Grease a cake tin.
  3. In a mixing bowl, cream together butter and brown sugar until light and fluffy. Beat in eggs one at a time.
  4. In a separate bowl, combine flour, baking powder, cinnamon, nutmeg, and salt. Gradually add it to the butter mixture, alternating with milk. Stir in vanilla extract.
  5. Fold in the boiled fruits along with any remaining liquid.
  6. Pour the batter into the prepared cake tin and smooth the top.
  7. Bake for 1 hour and 30 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let it cool in the tin for 10 minutes, then transfer to a wire rack to cool completely.
