  • 1/2 cup (100g) granulated sugar
  • 1/4 cup (60ml) vegetable oil or melted butter
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups (250g) all-purpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions:

  1. Preheat the oven to 375°F (190°C). Line a muffin tin with paper liners or grease the cups lightly.
  2. Mix wet ingredients: In a large bowl, whisk together the yogurt, sugar, oil (or melted butter), egg, and vanilla extract until smooth.
