Fresh lemon muffins


Easy basic recipe for delicious airy and fresh lemon muffins with the fresh flavors of fresh lemon, vanilla and a sweet glaze.


  • 225 g self-raising flour
  • 1 teaspoon baking powder
  • 250 ml whipped cream
  • 2 eggs
  • 100 grams of sugar
  • 1 packet of vanilla-flavored sugar
  • 2 lemons (organic)
  • 6 tablespoons icing sugar


  1. Preheat the oven to 190° degrees.
  2. Place the whipped cream in a bowl and add the sugar and vanilla. Beat together with a whisk (or briefly with a mixer).
  3. Beat in the eggs and mix briefly.
  4. Grate and squeeze the lemons.
  5. Stir the juice and zest (save some for garnish) into the mixture.
  6. Sift the baking flour and baking powder into the wet mixture and fold in briefly.
  7. Fill the muffin tins with the batter.
  8. Bake the muffins in the oven for about 20 to 25 minutes until the muffins are golden brown and done. Then let them cool.
  9. Add a few drops of water to the icing sugar and mix to form a glaze. Drizzle this over the lemon muffins. Garnish with a little lemon zest if desired.
