  • 4 bananas, peeled and cut in half
  • 1 cup vegan chocolate chips or other dark chocolate
  • 3 tbsp chopped salted peanuts
  • 8 popsicle sticks or bamboo skewers

  1. Cover a baking sheet with parchment paper. Peel the bananas, cut them in half and insert the popsicle stick into the cut end of each banana.
  2. Place the bananas on the baking sheet and into the freezer for 2 hours or until completely frozen.
  3. Melt the chocolate by using a double boiler, or using the microwave for 30 seconds at a time, stirring and repeating until fully melted.
  4. Dip each frozen banana into the melted chocolate until it’s coated. Use a spoon to help coat the banana as the chocolate gets lower. As soon as one banana pop is covered in chocolate, sprinkle the chopped peanuts on it. Do this quickly before the chocolate hardens. Repeat this process with each banana.
  5. Store in the freezer for up to 1 month in an airtight container, or enjoy immediately!
