Ingredients:

  • 1 bunch asparagus, trimmed and cut into bite-sized pieces
  • 8 oz (225g) mushrooms, sliced
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 1 teaspoon fresh thyme leaves
  • Salt and pepper to taste
  • Lemon wedges for serving (optional)

Instructions:

  1. Heat olive oil and butter in a large skillet over medium heat until the butter is melted and foaming.
  2. Add the minced garlic to the skillet and sauté for 1-2 minutes until fragrant.
  3. Add the sliced mushrooms to the skillet and cook, stirring occasionally, for 5-6 minutes until they are golden brown and tender.
  4. Add the asparagus pieces to the skillet and cook for an additional 4-5 minutes, or until the asparagus is tender-crisp and bright green.
  5. Stir in the fresh thyme leaves and season with salt and pepper to taste.
  6. Remove the skillet from the heat and transfer the sautéed asparagus and mushrooms to a serving dish.
  7. Serve immediately, garnished with lemon wedges if desired.
