Easy to prepare, Red Velvet Cupcakes are a cute and original way to show your love and affection through food.

Ingredients

  • 1 egg
  • 80 g flour
  • 20 g corn starch
  • ½ teaspoon baking soda
  • pinch of salt
  • 80 g sugar
  • 80 g butter
  • ½ teaspoon vanilla extract
  • red gel dye

For the buttermilk

  • 30 g milk
  • 30 g low-fat yogurt
  • juice of half a lemon

For the frosting

  • 200 ml fresh whipping cream
  • 3 tablespoons of icing sugar
  • 250 g mascarpone

For decoration

  • 12 raspberries
  • 2 tablespoons raspberry jam

Instructions

  1. For the buttermilk:In a bowl mix milk, yogurt and lemon juice. Cover and let rest at room temperature.
  2. For the dough:In a bowl, blend the soft butter with the sugar until you obtain a smooth mixture.
  3. Take the buttermilk and add the egg, vanilla extract and gel coloring (half a teaspoon should be enough). Mix well with a whisk. Bear in mind that it will tend to darken during cooking.
  4. Pour the buttermilk into the butter and sugar mixture and blend well.
  5. Add sifted flour, bicarbonate of soda and starch, a pinch of salt and continue mixing with the whisk.
  6. For the cooking: Pour the mixture into 6 cups inside a muffin mold and cook in a static oven at 160 degrees for 20/25 minutes.
  7. For the frosting:Blend the sugar, cream and mascarpone in a bowl until you obtain a dense and homogeneous mixture. Pour the frosting into a piping bag with a ribbed nozzle.
  8. For decoration :Once your muffins are out of the oven, use a nozzle to make a small hole in the center of each muffin, remove a little of the dough and set aside.
  9. Place the jam in a small piping bag, make a small hole and fill 6 raspberries which you will place in the hole of the muffin.
  10. Cover with the frosting. Decorate with another stuffed raspberry and with the dough crumbs kept aside.
