Decadent Chocolate Cheese Cookies

Ingredients:

  • ½ tsp baking soda
  • ¼ tsp salt
  • ½ cup (115g) unsalted butter, softened
  • ¾ cup (150g) brown sugar
  • ¼ cup (50g) granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • ½ cup (90g) dark chocolate chips or chunks

For the Cheesecake Swirl:

  • 4 oz (115g) cream cheese, softened
  • 2 tbsp powdered sugar
  • ½ tsp vanilla extract

Instructions:

1. Prep the Cheesecake Filling:

  1. Beat cream cheese, powdered sugar, and vanilla until smooth.
  2. Scoop teaspoon-sized dollops onto parchment paper and freeze for 15 minutes (to firm up).

2. Make the Chocolate Dough:

  1. Whisk together flour, cocoa powder, baking soda, and salt.
  2. In another bowl, cream butter, brown sugar, and granulated sugar until fluffy (~3 mins).
  3. Beat in egg and vanilla, then gradually mix in dry ingredients.
  4. Fold in chocolate chips. Chill dough for 20 minutes (to reduce stickiness).

3. Assemble & Bake:

  1. Preheat oven to 350°F (175°C). Line a tray with parchment paper.
