Brioche soft and fluffy like clouds, homemade flutes like those from Mulino Bianco, are wonderful and even better than the originals!
Ingredients
- 500 g of flour
- 250 ml whole milk
- 1 egg ( medium )
- 90 g caster sugar
- 80 g butter
- 8 g fresh brewer’s yeast
- 1 lemon ( grated peel or orange )
- 5 g salt
Instructions
- In a bowl, mix the yeast with the milk at room temperature
- Add the sugar, vanilla or aromatic mix and mix with a spoon
- Add the egg and the plain flour
- Work with your hands and add the soft butter in pieces and finally the salt
- Work the dough until it is smooth and homogeneous.All these steps can also be done in a planetary mixer using the hook
- Let the dough rise for about 2 hours, it should double in size
- Once the time has passed, roll out the dough and divide it lengthwise into 4 parts
- Then draw 3 horizontal lines
- In total you will have to get 12 rectangles

- Leave to rise until doubled, brush with milk and eggs and cook at 170 degrees for another 15 minutes
- Remove from the oven, let cool slightly and enjoy!
