  • 4 large egg yolks

Instructions

1. Make the Peach Puree:

  1. In a blender or food processor, combine the chopped peaches, sugar, and lemon juice. Blend until smooth.
  2. Strain the mixture through a fine-mesh sieve to remove any pulp, if desired. Set aside.

2. Prepare the Ice Cream Base:

  1. In a medium saucepan, heat the heavy cream, milk, sugar, and salt over medium heat until warm and the sugar is dissolved (do not boil).
  2. In a separate bowl, whisk the egg yolks. Slowly pour about 1/2 cup of the warm cream mixture into the egg yolks, whisking constantly to temper the eggs.
  3. Pour the egg mixture back into the saucepan and cook over low heat, stirring constantly, until the mixture thickens enough to coat the back of a spoon (about 5-7 minutes). Do not let it boil.
  4. Remove from heat and stir in the vanilla extract (and almond extract, if using). Strain the mixture through a fine-mesh sieve into a clean bowl.

3. Combine and Chill:

  1. Stir the peach puree into the ice cream base until well combined. Cover and refrigerate for at least 4 hours or overnight until completely chilled.

4. Churn the Ice Cream:

  1. Pour the chilled mixture into an ice cream maker and churn according to the manufacturer’s instructions. During the last few minutes of churning, add the diced fresh peaches (if using).

5. Freeze and Serve:

  1. Transfer the ice cream to a freezer-safe container and freeze for at least 2 hours to firm up.
  2. Scoop and serve! Garnish with fresh peach slices or a drizzle of honey, if desired.
