We present to you a delicious experience for your taste buds! Our new product, a stunning fruit cake with cottage cheese and cherry cream with mascarpone, will bring you an explosion of flavors that you have never experienced before. Get ready for a heavenly cake that will enchant you with every bite!
What will we need:
Dough:
- 4 eggs
- 150 g sugar (3/4 cup)
- 90 ml oil (1/2 cup)
- 240 g flour (4/5 cup)
- 3 teaspoons of baking powder
- 120 ml carbonated mineral water (1/2 cup)
Cherry Pudding:
- 300 ml cherry juice from a glass (1/4 cup)
- 25 g cornstarch (1/5 cup)
- 1-2 tablespoons of sugar or to taste
Other:
- 70 g roasted almond flakes (3/4 cup)
- cherry or strawberry jam – for spreading
Cream cheese:
- 200 g cream cheese (4/5 cup)
- 500 g whipping cream (about 34% fat)
- 50 g sugar (1/4 cup)
Cherry cream with mascarpone:
- chilled cherry pudding
- 200g mascarpone or cream cheese (4/5 cup)
Glaze:
- 250 ml cherry juice (from a glass) or water
- 1 package cake frosting (11 g red cake jelly)
- sugar – to taste
How are we going to proceed:
1. Dough: Beat the eggs in a bowl and pour in the sugar – beat until creamy. Next, add oil, sprinkle sifted flour mixed with baking powder and pour carbonated mineral water – beat thoroughly and you will get a dough.
2. Pour the resulting dough into a 26 cm diameter parchment-lined form and bake in a preheated oven for 30 minutes at 170 °C on top and bottom heat. After baking, let the dough cool for a while.
3. Cherry pudding: Pour cherry juice from a glass into a small saucepan and sprinkle cornstarch – mix and cook over low heat until thickened. At the end, sprinkle sugar to taste. Allow to cool after cooking.
4. Remove the parchment from the dough and cut it into 3 equal parts. Put the first part of the dough on a plate, then spread it with cherry or strawberry jam and place it in a hoop.
5. Curd cream: Put the curd in a large bowl, add the 34% fat whipping cream and sprinkle in the sugar – beat to a fluffy cream.
6. Apply the subsequently obtained cream to the dough in a circle, then spread it nicely, smooth it and cover it with the second part of the dough.
7. Cherry cream with mascarpone: Pour the cooled cherry pudding into another bowl and mix in the mascarpone – beat until smooth.
8. Apply the subsequently obtained cream to the second part of the dough, then spread it nicely, smooth it and cover with the third part of the dough.
9. Then spread with the remaining curd cream, which you spread nicely, smooth and decorate with the dripped cherries.
10. Frosting: Pour cherry juice, juice or water into a small saucepan, then pour in red cake jelly and add sugar – mix and cook over low heat.
11. Pour the resulting glaze over the surface of the cake and put it in the fridge for 4 hours, but preferably overnight.
12. Finally, brush the sides with the remaining cream and decorate with roasted almond flakes.
