On the corpus:
- 6 egg whites
- 90 g of sugar
- 90 g plain flour
- 1/2 teaspoon of baking powder
- 120 g grated chocolate (68%)
- Pinch of salt
For the yolk cream:
- 6 egg yolks
- 100 g of sugar (or to taste)
- 50 g cornstarch
- 500 ml of milk
- 1 teaspoon of vanilla sugar
- 100 g of softened butter
For the frosting:
- 30 ml of milk
- 30 g of butter
- 60 g of chocolate
To finish:
- 100 ml of milk (for coating the body)
Method
1) Preparation of the body: Beat egg whites with a pinch of salt until stiff, gradually add sugar. Slowly mix in the flour mixed with the baking powder and the grated chocolate. Spread the dough on baking paper in the form and bake for 8 minutes at 180 °C. Allow the body to cool completely.
2) Preparation of the yolk cream: Mix the yolks, sugar and starch with part of the milk. Heat the rest of the milk and pour the mixture into it. Cook until the mixture thickens. Cool under foil.
3) Preparation of the frosting: Heat the milk and butter, add the chocolate and stir until dissolved. Leave to cool.
4) Assembling the dessert: Cut the body into three parts. Brush each part with milk, spread a third of the cream on it. Repeat the layers and finish with a layer of cream. Cover the entire cut with chocolate glaze.
5) Finishing: Leave the dessert to rest in the fridge, ideally overnight. Before serving, you can decorate the slice with whipped cream or grated chocolate.
