Ingredients

  • 200 g dark chocolate
  • 110 g butter
  • 3 eggs
  • 150 g sugar
  • 50 g brown sugar
  • 25 g bitter cocoa powder
  • 70 g flour
  • 1 teaspoon baking powder

Instructions

  1. Place the chocolate and butter in a bowl and melt in a bain-marie or in the microwave. In another bowl we put the eggs, sugar, brown sugar and mix everything. Melt the sugar in a bain-marie, stirring the mixture which will whip slightly in the meantime. As soon as the sugar has melted, place the bowl on the work surface and whisk for a few minutes until the mixture becomes frothy.
  2. Then add the melted dark chocolate and whisk for a few minutes. We combine the flour, yeast and cocoa sifted together. Mix with a spatula and pour the mixture into a buttered or lined baking tray. Bake at 180° for 30 – 35 minutes. Remove from the oven and let cool.
  3. Melt the dark chocolate together with the cream and pour it onto the brownie base. Let it rest in the fridge for 20 minutes, melt the white chocolate together with the cream and pour it over the dark chocolate and let it rest for 20 minutes in the fridge. As soon as it’s all set, remove the base from the mold and cut it into squares, then serve them.
