  4. Combine wet & dry—gently fold until just mixed (don’t overmix; batter should be thick).
  5. Fill muffin cups ¾ full and bake for 18-20 mins until golden.
  6. Cool slightly, then brush with melted butter and roll in cinnamon sugar.
