They are soft and crumbly, so much so that they melt in your mouth. The dimples then leave a wide choice of flavors because you can choose your favorite filling. The best for me? With orange marmalade and black cherry jam because they are less sweet.
Ingredients
- 100 g of flour
- 130 g of finely chopped hazelnuts or almonds
- 2 egg yolks
- 60 g of granulated sugar
- 90-100 g of soft butter
- a pinch of salt
Instructions
- Finely chop the hazelnuts or almonds in a mixer or Thermomix together with a spoonful of sugar for a few seconds
- In a bowl, add the egg yolks and sugar and mix with a fork
- Add the flour, the hazelnuts reduced to flour and finally the butter cut into cubes and softened at room temperature
- Mix with your hands until you obtain a dough
- Take the dough and let it rest in the refrigerator for about 20-30 minutes
- Once the resting time is over, form many balls of 20 g each and place them on baking paper
- Press well in the center of each ball and cook in a static oven at 180° for about 20 minutes
- Once the cooking time has passed, let it cool slightly and add your favorite jam and spreadable cream to the center
- And sprinkle the surface with icing sugar if desired
